The Boreal Series is the architectural form — square sides, thick, the end grain pulled vertical to meet the knife. This is a maple butcher block built to be used: 20 inches by 12, two and a quarter thick, eleven and a half pounds of mass that sits where you put it and stays there.

First, the build. I cut every maple butcher block from hard maple stock, then glue it end-up so the wood fibres stand vertical. Because end grain construction sets the fibre up to meet the blade, the surface absorbs the cut rather than resisting it. As a result, the board self-heals as the years pass and the knife edge stays sharper for longer. Side handles for the lift. Footed underneath so air moves and the wood stays dry.

What makes a maple butcher block different

Maple is the blank canvas. Meanwhile, the pale, even tone lets the food be the colour on the counter — the herbs, the citrus, the steak — without competing for the eye. Most importantly, hard maple is dense without being heavy on the blade, so a sharp knife stays sharp through a full prep session. The board doesn’t fight the cook; it carries the work.

How to use one

Twenty by twelve at two and a quarter thick is the full-weight working surface. So when the cleaver comes out for whole chicken or the chef’s knife is doing rough prep on hard squash, this is the surface that takes it without shifting. Either way you cook, the block lives on the counter — not in a cabinet — because it’s heavy enough to make moving it more work than just using it.

Care, custom work, and shipping

First, wash with warm soapy water and dry flat after each use. Second, never let the board soak or run it through the dishwasher. Finally, condition with butcher block oil monthly for the first season, then every quarter — Board Butter is the recommended finish. One of one. When this one ships, it’s gone.
